Mushroom Scallops

Mushroom Scallops are a delicious and elegant plant-based dish made from thick slices of king oyster mushroom stems. Pan-seared to golden perfection and infused with savory, garlicky flavor, they mimic the tender texture of sea scallops and pair beautifully with pasta, risotto, or creamy sauces.

Ingredients:

8–10 large king oyster mushrooms (use the thick stems only)

2 tbsp olive oil or vegan butter

2 tbsp soy sauce or tamari

1 tbsp lemon juice

1–2 cloves garlic, minced

Salt and pepper to taste

Fresh parsley (optional, for garnish)

Instructions:

Prep the mushrooms: Slice the thick stems of the king oyster mushrooms into 1-inch "scallop" rounds.

Use a knife to lightly score the tops in a crisscross pattern (this helps absorb flavor).

Marinate (optional but recommended): In a shallow bowl, mix soy sauce, lemon juice, and garlic.

Add the mushroom rounds and let marinate for 15–30 minutes.

Cook: Heat olive oil or vegan butter in a skillet over medium heat.

Sear the mushroom rounds for 3–4 minutes on each side, until golden brown and tender.

Season with salt and pepper to taste.

Serve: Garnish with fresh parsley and serve over pasta, risotto, or mashed potatoes.
